So last night, in the spirit of good-luck and Irishness and all, I decided to cook corned beef, cabbage, and potatoes. Yum, right? The thing is, the meat came out questionably. I mean it looked and smelled great, but I wasn't 100% sure that it was cooked all the way. With corned beef, how can you really tell anyway? It's always pink!

I stopped on the way home today and bought a meat thermometer. Don't worry, it's safe to eat at my house (now).


  1. I hate being stuck between over cooking and wondering if something is done...I feel your pain. So, did you eat it last night?

  2. We did... but it seemed kinda funny to me. Corned beef is actually "beef" isn't it?! I mean, was it just like eating a rare steak? All I know is that tonight I re-cooked the leftovers in the oven again and they seemed to taste better than before... but don't tell hubby! He always accuses me of under-cooking :-p
